Carving meat correctly is an art. There’s something about watching a chef carve meat that compels you to stop what you’re doing and consume immediately.
Historically, carving meat was considered a culinary art of the highest form only carried out by senior officials, in royal or aristocratic households, who were known as esquires tranchants.
Their duties were performed with swords by their sides to ward off any thief wishing to chance their arm whilst the precious meat was being cut. King Louis-Philippe of France (1773-1850) stood at the bottom of his table, at every meal, to carve meat for his family.
