Just wait until you see what's new at the Mercato this
week. We're excited about Springhill Cheese, a California
cheese company that grows the feed and milks the cows and goats
to produce the incredible yellow, white and smoked Cheddars,
7 varieties of Jack, Teleme, Feta and even wonderful fresh butter
that the farmer's niece will be bringing to our market.
Da-Le Ranch will offer their naturally-raised, farm-fresh pork
and their neighbors' lamb and chicken. We sampled the pork
chops last weekend and fresh meat is as amazing as fresh vegetables
when it comes to taste. For dessert? Little Italy's own
Chi Chocolat will sell their beautiful handmade chocolates starting
this week. Mangia!

PASTA
One of our vendors shared this amazing
recipe, featuring all Mercato ingredients. Heavenly!
In skillet, sauté 2
chopped cloves of garlic in olive
oil. Add large wedges of 2 ripe
Heirloom tomatoes and 1
white peach from our farm stands and simmer until nice juices
have formed. Add ¼ cup of chopped fresh basil from
Basiltops, or from the plant you got from Mission Hills Nursery, and Truffle
Salt to taste, from the DiSegno Plus booth. Pour over cooked
sweet potato pasta from Pappardelles. Feeds two very happy Mercato
shoppers.

SALUMI!
We got a note from Jay Porter at the Linkery last week, so we'd
like to clarify that all of the Linkery's sausage and cured
meats are made in-house. Rey Knight did work at the Linkery in
2007, but he now sells his amazing sausage, Brandt-beef breseola,
and more to Urban Solace, the Ritual Tavern and soon to Mercato
shoppers! Look for Knight Sulumi to join us a week from Saturday.
